Brain Bypass Helles Lager

By Austen Conn, Head Brewer and BrewBilt Poet Laureate

Brain Bypass… hmm forgive us for having a ponder… stylistically brewed as a nod to the Bavarian darling - Helles.  Light, you say? Indeed. Though not in the traditional and oft negative American connotation of “light” (low calorie, watery flavor impressions, usage of low-quality adjuncts) nay, this rendition of “light” is the essence of radiance. A beam of sunshine, a heartfelt ballad celebrating the potential of malt in all of its glory – golden – if you will.

Mashed with a blend comprised of Sacramento Valley-grown floor-malted Pilsner and complemented by Feldblume Continental malt. A touch of Munich malt enhances the qualities of both previously mentioned while contributing further depth of character. As tradition, the balance of hop bitterness is kept in check, providing a supporting role. Restrained use of our preferred German-grown hop varietals contribute a delicate noble aromatic profile.

Of course it must be mentioned, we are speaking of fine European-inspired lager bier, are we not? Lest we forget tradition, allow us to indulge! Cold fermentation under pressure, extended cold storage (lagering) and maturation are just as impactful contributing factors as the ingredients themselves.

Thoughtfully executed lager is indeed a particular combination of inputs (high quality ingredients), process (quality oriented execution), and of course philosophy (some real folks are keeping these levers a’turning and grain a’crushin y’all know what we sayin?). In other words, we believe in lager and approach it with reverence and a mindful eye towards quality each and every time. Don’t overthink it. Just enjoy the ride.
