Secret Incantation reveals the mystery of an English-inspired Porter fermented slow and low with our house lager strain. This incantation was inspired by our desire to brew with our close friend Sean Cox of Jernigan’s Taproom right here in Nevada City. Sean has been a long supporter of ours and retains the bragging rights for being our very first customer, pouring our first keg of beer that came out of our production facility. When we first began kicking around the idea, Sean was steadfast in his inclination to produce a Porter without adjuncts and free from distraction. A true homage to the classic style. While we don’t typically employ an old-school English yeast strain in our facility we pondered the possibility of Porter.

After some time, the path was revealed to us. By utilizing our lager strain we could increase drinkability and retain a beautifully nimble finish on a beer packed with flavor and texture.

As always, we began with a robust foundation built upon California-grown Pale and high-kiln Munich malts from Admiral Maltings. From there we feathered in an abundance of malted oats for a velvety texture. Additionally we employed some fine British speciality malts from Crisp Malting Company. Brown malt, two forms of Chocolate, Black Patent, and a kiss of British Crystal 75 create waves of depth and complexity and helped provide a jet-black color.

We get deep impressions of bakers cocoa, hazelnut, light roasted pour-over coffee notes and hints of chocolate covered espresso bean from the malt profile. We bittered exclusively with our German hop varietals to create a smooth yet layered impression from the hop profile. We’re incredibly excited to share this singular batch of beer with you and hope you’ll join us for its debut at Jernigan’s Taproom this Wednesday 11/13.
